A soft cake with a subtle vanilla and hazelnut flavor, a mesmerizing color, and an ultra-soft texture. Perfect for cozy brunches, afternoon teas with friends, or rainy Sundays.
✨ Ingredients (for 6 to 8 servings):
- 150 g of flour (wheat, spelt or other)
- 100 g of coconut sugar (or brown sugar)
- 2 eggs
- 80 ml of neutral oil (sunflower, grape seed, etc.)
- 120 ml of vegetable milk (almond, oat, coconut, etc.)
- 2 tbsp. Ubeal ube powder
- 1 tsp baking powder
- 1 pinch of salt
Optional for the finishing touch:
- Coconut cream or vanilla whipped cream frosting
- Topping: coconut flakes, pistachio pieces, edible dried flowers 🌸
👩🍳 Preparation:
- Preheat your oven to 180°C (fan-assisted if possible).
- In a bowl, whisk the eggs with the sugar until frothy.
- Add the oil, plant-based milk, and ube powder. Mix well until the color is even (it should be bright purple 💜).
- Then add the flour, yeast, and salt. Mix without overworking the dough.
- Pour into a mold (round, cake or cupcake version).
- Bake for 25 to 30 minutes (check cooking with the blade of a knife, it should come out dry).
- Let cool before unmolding... and add homemade icing if you want to enhance it.
